5 Easy Family Friendly Meals for your first week of Back-to-School
1️⃣ Sheet Pan Chicken Fajitas
Ingredients:
1 lb boneless, skinless chicken breasts, sliced into strips
3 bell peppers (any color), sliced
1 large onion, sliced
3 tbsp olive oil
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
Salt & pepper to taste
Tortillas + toppings (shredded cheese, salsa, sour cream, avocado)
Recipe:
Preheat oven to 400°F (200°C).
Spread chicken, peppers, and onion on a sheet pan.
Drizzle with olive oil, sprinkle with spices, toss well.
Bake 20–25 minutes, until chicken is cooked through.
Serve with tortillas and toppings.
2️⃣ One-Pot Creamy Pesto Pasta
Ingredients:
12 oz pasta (penne or rotini)
3 cups chicken or vegetable broth
1 cup milk (or dairy-free alternative)
1 cup cooked chicken (rotisserie works great)
1/2 cup prepared pesto
1/2 cup grated Parmesan cheese
Salt & pepper to taste
Recipe:
In a large pot, bring pasta, broth, and milk to a boil.
Reduce heat, simmer uncovered until pasta is al dente and liquid is mostly absorbed (about 10–12 min).
Stir in cooked chicken, pesto, and Parmesan.
Serve warm.
3️⃣ Baked Turkey & Veggie Meatballs
Ingredients:
1 lb ground turkey
1 cup breadcrumbs
1/2 cup grated zucchini (squeeze out water)
1/2 cup grated carrot
1 egg
1 tsp garlic powder
1 tsp Italian seasoning
Salt & pepper to taste
1 jar marinara sauce
Pasta or rolls for serving
Recipe:
Preheat oven to 375°F (190°C).
Mix turkey, breadcrumbs, veggies, egg, and seasonings.
Roll into golf ball-sized meatballs; place on baking sheet.
Bake 18–20 min until cooked through.
Toss with marinara sauce and serve over pasta or in rolls.
4️⃣ BBQ Chicken & Veggie Quesadillas
Ingredients:
2 cups shredded cooked chicken (rotisserie works)
1/2 cup BBQ sauce
1 cup shredded cheese (cheddar or Mexican blend)
1 cup diced bell peppers or corn
Flour tortillas
Olive oil for cooking
Recipe:
Mix chicken with BBQ sauce.
Heat a large skillet with a little olive oil.
Place tortilla in pan, sprinkle cheese, add chicken mixture, peppers/corn, more cheese, and top with another tortilla.
Cook 2–3 min each side until golden brown.
Slice and serve.
5️⃣ Mini Muffin-Tin Egg Bakes (Perfect for breakfast-for-dinner)
Ingredients:
6 large eggs
1/4 cup milk
1/2 cup diced ham or cooked sausage
1/2 cup shredded cheese
1/2 cup chopped spinach or bell peppers
Salt & pepper to taste
Recipe:
Preheat oven to 350°F (175°C).
Whisk eggs, milk, salt, and pepper in a bowl.
Grease a muffin tin, divide ham/sausage, cheese, and veggies evenly into cups.
Pour egg mixture on top.
Bake 18–20 min until set.
