5 Easy Family Friendly Meals for your first week of Back-to-School

  • Salt & pepper to taste

  • Tortillas + toppings (shredded cheese, salsa, sour cream, avocado)

Recipe:

  1. Preheat oven to 400°F (200°C).

  2. Spread chicken, peppers, and onion on a sheet pan.

  3. Drizzle with olive oil, sprinkle with spices, toss well.

  4. Bake 20–25 minutes, until chicken is cooked through.

  5. Serve with tortillas and toppings.

2️⃣ One-Pot Creamy Pesto Pasta

Ingredients:

  • 12 oz pasta (penne or rotini)

  • 3 cups chicken or vegetable broth

  • 1 cup milk (or dairy-free alternative)

  • 1 cup cooked chicken (rotisserie works great)

  • 1/2 cup prepared pesto

  • 1/2 cup grated Parmesan cheese

  • Salt & pepper to taste

Recipe:

  1. In a large pot, bring pasta, broth, and milk to a boil.

  2. Reduce heat, simmer uncovered until pasta is al dente and liquid is mostly absorbed (about 10–12 min).

  3. Stir in cooked chicken, pesto, and Parmesan.

  4. Serve warm.

Ingredients:

  • 1 lb ground turkey

  • 1 cup breadcrumbs

  • 1/2 cup grated zucchini (squeeze out water)

  • 1/2 cup grated carrot

  • 1 egg

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • 1 jar marinara sauce

  • Pasta or rolls for serving

Recipe:

  1. Preheat oven to 375°F (190°C).

  2. Mix turkey, breadcrumbs, veggies, egg, and seasonings.

  3. Roll into golf ball-sized meatballs; place on baking sheet.

  4. Bake 18–20 min until cooked through.

  5. Toss with marinara sauce and serve over pasta or in rolls.

4️⃣ BBQ Chicken & Veggie Quesadillas

Ingredients:

  • 2 cups shredded cooked chicken (rotisserie works)

  • 1/2 cup BBQ sauce

  • 1 cup shredded cheese (cheddar or Mexican blend)

  • 1 cup diced bell peppers or corn

  • Flour tortillas

  • Olive oil for cooking

Recipe:

  1. Mix chicken with BBQ sauce.

  2. Heat a large skillet with a little olive oil.

  3. Place tortilla in pan, sprinkle cheese, add chicken mixture, peppers/corn, more cheese, and top with another tortilla.

  4. Cook 2–3 min each side until golden brown.

  5. Slice and serve.

Ingredients:

  • 6 large eggs

  • 1/4 cup milk

  • 1/2 cup diced ham or cooked sausage

  • 1/2 cup shredded cheese

  • 1/2 cup chopped spinach or bell peppers

  • Salt & pepper to taste

Recipe:

  1. Preheat oven to 350°F (175°C).

  2. Whisk eggs, milk, salt, and pepper in a bowl.

  3. Grease a muffin tin, divide ham/sausage, cheese, and veggies evenly into cups.

  4. Pour egg mixture on top.

  5. Bake 18–20 min until set.
